(夜市小吃點心)小心燙口的"脆皮炸鮮奶"

食材 (4 人份)
鮮奶2杯(480CC)
細砂糖2大匙
鹽少許
無鹽奶油5g
玉米粉6大匙
市售脆漿粉100g
水150g
作法
1 先用120cc鮮奶加玉米粉拌勻(類似勾芡水)
2 將剩餘牛奶加溫後, 轉小火加糖、鹽、奶油攪拌至糖融化, 將作法1倒入(記得一邊攪拌喔), 煮滾後熄火, 裝入平盤中放涼後冷藏4小時

3 市售脆漿粉 100g, 水 150g (兩者調勻即可)

4 四小時後, 將油鍋加熱至160度, 將奶凍切塊, 裹上麵糊, 炸約20秒至金黃酥脆狀即可起鍋
